We’ve been running…to the store, to school, to clients’ homes, to dinner, to the doctor…running around all over town for the past week. We needed to slow down a bit today, especially with the Halloween candy hangover still looming over us. With the colder temps and rush of life buzzing by, it was time for some warm comfort food. We indulged in our dinner tonight: filet, roasted asparagus and this little treat – spaghetti squash fritters.
I picked up the recipe from a show that I actually do not like all that much! Regardless, the fritters are amazing. Just to be sure we rounded out our comfort dining properly, we added a nice Pinot Noir into the mix. A needed end to a busy few days.
